- Preheat oven to 175°C (350°F). Grease and flour two 9-inch pans.
- Whisk dry ingredients together in a bowl.
- Add eggs, milk, and oil; mix until smooth.
- Stir in 1 cup boiling water (batter will be thin).
- Divide batter evenly between prepared pans.
- Bake 30–35 minutes, until a toothpick comes out clean.
- Cool in pans for 10 minutes, then invert to racks.
- Frost when completely cool and serve.
